Barbecoa Dish

Ingredients:

  • 3-4 lbs chuck roast
  • 3/4 cup apple cider
  • 2-3 limes
  • 4 tbps Barbecoa (Spice)

  • Time:
    1/2 hour prep, 4-1/2 hours cooking time.


    Method:
    Preheat oven to 250 degrees (F).

    Cut roast into 6-8 pieces, browned in olive oil or grill over oak chips.

    Mix spice and lime juice into paste, add apple cider. You can mix the paste up to a day in advance and store in the refrigerator.

    Add sauce to meat in pan, bake 1 hour uncovered, bake 3 hours covered, fork apart, bake 1/2 hour covered.

    Serve with salt and lime juice.
