Barbecoa Spice

Ingredients (by volume):

  • 10 parts ancho
  • 10 parts cayene
  • 05 parts cilantro
  • 05 parts cumin
  • 05 parts garlic powder
  • 05 parts onion powder
  • 05 parts oregano
  • 05 parts paprika (half sharp)
  • 05 parts black pepper
  • 05 parts coarse kosher salt
  • 01 part cloves


  • Can be used to season tacos, chili, etc. or can be used to make Barbecoa (Dish) or Moorish Chicken (Dish). Generally use 1 tbsp per pound for full spice or half tbsp per pound for a less spicy version. Combine with the juice 1/2 lime per tbsp and let rest in the refrigerator for a few hours to open the spices. Be sure to shake well before using.
